From Here to Health

My journey back from autoimmune disease

January 29, 2013

Finally put some darkening material over my windows and it is awesome!  I’m doing well at going to sleep before 10:30.  It has been ranging from about 9:45 to 10:30 and I think that’s pretty good.  So far the thyroid med seems to be agreeing with me.  I haven’t noticed any major changes, but it certainly isn’t giving me any problems.  I made the kids (ok, I ate some too) the Easy Peasy Pancakes from Paleo Parents.  They were easy and they were really delish!  For dinner we had the Pad Thai from Well Fed.  The kids didn’t eat it we well, but the hubby and I thought it was great!  I am going to try to get back to putting some pictures on here.  I was using Instagram and then my account got all messed up so I quit.  Anyway, not much exercising to speak of today- some rebounding and 25 minutes of yoga.  I planned on taking a walk but I just curled up and read a book instead.  Oops:)

January 20th, 2013

So for the time being, I think I am going to use this blog like a health journal.  Just a place to jot down what did and didn’t go right in all aspects of my health on a daily or at least semi-regular basis.  It’s helpful to be able to go back and have some clues for what is and isn’t  working in my life.  Today was a good day.  I woke up at 7:15 feeling good enough to get my whole crew (and myself) ready for 8:15 church service.  For the past week I have woken up early enough to read my Bible and do my lights before getting out of bed.  Without the use of an alarm clock I might add!  It feels so nice to have already done those two things before I even start my day.  I started a new Bible study group last Monday and we are reading through the chronological Bible in a year. We also have a particular passage each 2 weeks that we are focusing on.  Right now it is Genesis chapter 2-3, the story of Eve.  In addition, we are memorizing 12 fairly lengthy passages over the course of the year.  I mention this here, because I wholeheartedly believe that my spiritual health ties in to my physical health.  They can’t be separated and when this area of my life is full and working, my physical health also reaps benefit.  I have been using the Bible apps on my Kindle Fire and I have to say I LOVE them!  There are all sorts of plans and different versions that keep me on track.

I had a pea protein shake before church.  For lunch I made a spaghetti squash pasta with onions, garlic, sundried tomatoes, red bell pepper, heart of palm, pine nuts and fresh parsley.  I added some tuna for some protein and it was super delicious.  For dinner, I had last nights leftovers- cauliflower fried rice with char sui- a recipe from Well Fed.  Something in this did not agree with me.  I became very bloated after eating.  I am sort of inclined to say it was the egg.  However, I still can’t wrap my mind around why I can have eggs in the morning and it doesn’t happen?!  The bloating is almost exclusively reserved for the evening.  It happens other times when I know I haven’t had eggs, so it can’t be the eggs exclusively.  It seems as if I can’t tolerate much food after about 5:00.  Weird.

I didn’t do any real organized exercise today, but I did go for a 40 minute walk while I listened to the last Everyday Paleo Podcast.  I have become super fond of this podcast and the Balanced Bites podcast.  It was super sunny and about 60 degrees here in Memphis today to it was really enjoyable.  I decided to stay outside for another hour when I got home and read a few chapters of a novel for me and a chapter of a book I am reading to my boys.  Mine is just a cute romance, but I am reading All Quiet on the Western Front to my boys and it is MUCH heavier.  My daughter and I are reading Dr. Dotlittle.

We went to the first meeting of our new Life Group tonight.  (just a group of families from church that get together to fellowship).  I made some paleo chocolate chip cookies.  It’s always interesting bringing paleo things to new groups.  Generally people are super sweet when they know I have genuine allergies and this was the case tonight.   A few people even ate some.  My kids ate several.  These weren’t my best batch.  I modified a recipe from Paleo Indulgences and they weren’t bad, they just weren’t my favorite.  They were very cakey and I like my cookies very doughy.

One other thing I have been considering on the health front is “restricted eating windows.”  Some people call it intermittent fasting, but I prefer the window thing.  I have been trying to really tap into eating when I am hungry and really feeling connected to my body’s cues.  I have heard over and over and over that ” you should eat breakfast within an hour of waking up”, but I am usually not hungry that early.  Right now I generally eat between the hours of 8-7:30, but I would like to get that down to maybe a 8-9 hour window of eating.  I plan on starting slowly because I don’t want my body to perceive it as stress.  I am going to try shifting my eating window from 9-7 for the rest of this month and see how my body responds.  Will keep you posted.

Sleep- Another great night thanks to the fact that my hubby was off for Labor Day. Since he works nights, this meant another night of passing out on his chest.  The real test will be tonight now that he is, sadly, back at work:(

Exercise- CrossFit at 9am.  Warm-up- 400 meter run, stretching, worked on snatch and jump shrugs, worked on plantar fascia with a lacrosse ball.  That hurt.  Apparently, mine are tight!  While the rest of the crew worked on snatch pulls (I think), I worked on overhead squats with a 15 pound bar.  This was the first time I have been able to get my arms overhead without serious pain in weeks, so it was a big moment.  The WOD today was 5 pull ups and 100 meter runs, AMRAP, 10 minutes.  I used a blue band and I got 9 rounds.  Later, I did a 12 minute Bodyrock with Doug and there was a new exercise on there called the Spiderman and it kicked our booties!  While the kids were visiting next door with my parents (yes, my parents live next door and it is fabulous), I did a 25 minute rebounder routine that I found in a magazine and wanted to try out.  I watched a rerun of Mike and Molly which I love.  Melissa McCarthy is so freakin’ awesome! LOVE HER!

Food

Breakfast

2 organic chicken sausages, avocado, sweet potato hash browns

Lunch- Ok, so I didn’t really eat lunch, but is was because I made snacks for the kids for the week and I couldn’t help myself from trying them.  And once I did, I wasn’t hungry for lunch.  Here’s what I made, for the kids of course;)

Banana Nut Muffins with Chocolate chips- made with almond flour and a little honey

Essentially a Paleo Smore

I made a big batch of what essentially is a paleo graham cracker. The recipe is from Eat Like a Dinosaur.  It is made with a combo of coconut flour and almond flour.  I am freezing them so I can have them for when the kids need a “treat”.  I had just enough natural peanut butter left in the jar that I couldn’t help myself from slathering one with it and then popping on a small square of 72% dark chocolate.  It was yummy.  Oh, and the kids liked them too:)

Dinner

Spaghetti Squash with olive oil, garlic and red pepper flakes

I had leftover spaghetti squash so I decided to make a version of a recipe in Well Fed.  I just sauteed garlic and red pepper flakes in olive oil then added some salt, pepper and parsley.  When it was done I topped it with the almond flour crumbs that had been toasted in coconut oil.  And for extra decadence I threw on some grass-fed cheese.  It was super simple and good.

Sleep- Another night of falling asleep drooling on my husband’s chest.  Sexy, right?  I know that is what all guys are looking for:))  So maybe not sexy, but a peaceful and safe way to fall asleep in my opinion.  Again, slept until almost 8:00.  Pretty awesome!

Exercise- No 9am CrossFit because of Labor Day.   Doug and I went for a 5k run instead.  Clocked in at 33 minutes exactly.  My goal is to be able to do it in 30 minutes, but I’m not in a big hurry to get there.  Today I just wanted to enjoy the run with my husband.  Around 5:00pm we did a 12 minute Bodyrock workout that was pretty tough.

Food

Breakfast

2 egg omelet with spinach, red peppers, cheese and sausage; organic strawberries

Very weird picture, but it really is and omelet.  Some of the sausage was just piled on top.  Doug made these for us after our run.

Lunch

Organic apple with sunflowerseed butter

Breakfast was really filling and kinda late so I wasn’t super hungry at lunch.

Snack

Mini DQ Reese’s Blizzard- 1/2 Empty

So I promised my daughter ice cream if she did well getting her picture made today.  Parker aka “Booger Mustache” is also a professional photographer so he came back today to get some shots of Finn.  She insists that she wants to be on TV so she has an audition with a casting agency on Saturday.  We have to bring some non-returnable photos to give them so Parker is helping us out.  Back to the snack, all the kids and Parker had a dip cone, but I got a mini Reese’s blizzard and just had half.  As soon as the really good bites were gone, I chunked it.

Dinner

Thai Hot Plate from Well Fed

Once again I thought this was delish, but the kids wouldn’t touch it this go around.  My boys have gotten crazy picky over the last week.  One of my sons ate nothing today except the dip cone.  He now claims he doesn’t like eggs or sausage so breakfast was out.  At lunch he claimed not to be hungry, but since he didn’t eat breakfast I don’t know how that is possible.  At dinner he said he was hungry but took one look and decided he would rather go to bed.  Oh well, I don’t fix “extra” meals.  You get what you get at our house.  Here’s hoping he doesn’t starve!

Sleep- 11:30-7:30.  Baby girl ended up in my bed, but other than that it was great.  I know I had some dreams, but they are just beyond my reach.

Exercise- CrossFit at 9am.  Warm-up- 800 meter run, 8 inch worms, 50 sit ups and some stretching.  I still can’t lift, but my trainer told me to see how low I could go on a band for my chin ups.  I was able to do 1 chin up unassisted!  No band!  Everyone one has been PRing this week but I missed out since I couldn’t lift.  So at the end of the week I finally got a little moment.  It felt good!  I went for a 2 mile run later in the day- 18:30.

Food

Breakfast

Same as yesterday.

Lunch- Same as breakfast, minus the egg.  Boring I know, but I hated to waste it.

Snack- 6 organic corn tortilla chips with this awesome pimento cheese my mom had!  Yum!!

Dinner

I call this BBQ Sundae. Cole slaw, BBQ, sauce and dill pickles.

Got to have dinner with this sweet guy who is in town for a visit.

My Nephew Houston

Sleep- Slept from 10:30 to 7:30 except for the few minutes when Jesus woke me up around 3:45.  And yes, you read that right.  Jesus spoke to me last night and woke me up.  I was having a dream in which I was speaking to my grandfather who is very ill.  The relationship is very strained and he does not know my kids because of it (his choice, not mine).  In the dream, I come to my grandfather (I am leaving out other details that I do think have meaning, but I’m just going to cut to the Jesus part) and he says, “So tell me about those boys.”  And I say, “They are loving, sweet, so smart and they show Jesus to people every day.”  And what really seemed like an audible voice says in my ear (loud enough to wake me up) “So do you.”  My husband works night, no one else was around.  I am convinced it was Jesus.  I am always so quick to see the good in my kids or my friends.  I always encourage others to tap into the divinity in themselves.  But often when it comes to looking at myself, I am a very harsh and judgmental critic.  I’m taking this as a sign to love myself and own my own little piece of the divine.  It will be a journey, but I am going to pray that Jesus continues to reveal himself to me.

Exercise-CrossFit at 9am.  Still can’t lift, but I did the warm-up- 300 jump ropes, 10-15-10 pull ups (blue and red band), 30 push ups (I started these and then my trainer said NO), fascia stretches for the achilles tendon. During the lift I did squats and sit ups.  The WOD had to be modified – 10 pull ups, 5 knees to elbows, 7 one leg elevated squats (each leg) 5 rounds.  My time was 8:40.  At around 5:30 I did 24 minutes of Bodyrock with Doug.  No weights, just cardio/bodyweight stuff.

Food-

Breakfast

Leftover Hot Plate with a scrambled egg

Lunch

Chick-fil-A 6 pack grilled nuggets kids’ meal w/unsweet tea

Alright, not paleo.  But it was worth it to share lunch and shopping with these 2 sweet faces.

Cooper enjoying fried rice and honey chicken at the mall

Presley doing the exact same thing. Go figure, twins!

Dinner

organic apple, sunflower seed butter, grass-fed cheese

Wasn’t super hungry and didn’t feel like cooking.

Snack- I made some Zucchini Bread from Eat Like a Dinosaur and I had a slice fresh from the oven.  Will try to post a picture tomorrow.

Sorry I have been a little remiss about posting.  This lack of sleep thing has gotten my schedule all out of whack.  Last night I slept from 3am to 7am.  Honestly, not as bad as some nights but certainly not great.  I spent the first half of the night trying to cast out demons in Jesus’ name.  Some of you might think that is a little whacky, but I happen to believe that angels and demons are real and that we are in a time of change on the planet right now and these “other beings” are very active.  I believe it is Biblical.  Anyway, I believe (and have had confirmation from others) that I am highly sensitive to different energies.  I think a lot of what is going on with me has to do with the shifting energies on our planet.  How weird do you guys think I am now? 🙂  I will keep you posted about developments in this area.

As for exercise, it was a rest day from CrossFit, but I did run 3 miles on the treadmill.  29:46

Food

Breakfast- scrambled eggs and 1 nitrite free sausage patty

Lunch- It was Finn’s first day of Homeschool Mother’s Day Out and I did some errands and shopping sans children. Woo Hoo!  Time really got away from me and before I knew it, it was 2:00!  Chipotle is very near her school, so I stopped in there and got my usual salad- lettuce, grilled veggies, pork, pico, salsa and guacamole. Yummy!

Finn waiting at the door to leave for “school”

Dinner- I can’t get enough of this particular Middle Eastern Hot Plate from Well Fed.

Steamy Red Cabbage with onion, garlic, spices

Added in the garlic browned grass-fed beef

Added spaghetti squash and parsley to finish

Sleep- Hallelujah! Hallelujah!  I slept for 9  hours!  It’s about time since for the past seven nights I probably haven’t gotten 9 hours total!  Now I feel like I can return to the land of the living and get back to blogging. My daughter didn’t even get up last night. No spider nightmares!  Totally praying this continues.  I am a much more effective mother, wife, coach, human being, etc. when I have had a good nights’ sleep.

Exercise- CrossFit at 9am.  My shoulder is much better, but my trainer has told me no lifting for the next 2 weeks.  I did some stretching then I did 50 ring pull ups.  The WOD today was wall balls and burpees.  I felt like I could do burpees, but trainer said no, so my WOD was 15 Wall Ball Touches (10# ball) with a squat and then 7 jump squats for 10 minutes.  I got 11 rounds.  At 5pm I did a 12 minute Bodyrock workout with Doug and then a 3 minute Bodyrock Ab Bonus.  Also 10 minutes on the rebounder.  I am planning on doing some stretching before bed, but as it is only 7:30, that remains to be seen.

Food- Let me just say that my food choices may be a little random since payday is Friday and we are basically out of food.  I am trying to make do with what we have which isn’t easy.

Breakfast

Sweet potato hashbrowns, 1 nitrate free sausage patty, 1/2 small avocado

Lunch

More sweet potato hashbrown, cauliflower “mashed potatoes”, organic frozen wild blueberries, peanut butter on gluten free crackers

Sorry for the fuzzy picture.  The cauliflower is from Well Fed and I thought it was awesome!

Dinner

Wild Alaskan Salmon Cakes and Organic Broccoli with Grass-Fed Butter

LOVE me some grass-fed butter.  Everything is better with just a little bit:))

Sleep– Not bad, a little better actually.  I didn’t wake up at all until 5:30.  Got up, used the bathroom, and went back to sleep.  Fell back asleep til 7:30.  Shoulders were still hurting some but not enough to keep me awake so I was thankful for that.

Exercise- Scheduled day off from CrossFit.  I did do 30 minutes on the rebounder just because I think it’s fun and I haven’t done it in while.  I also took a 2 mile walk (35 mins) during my daughter’s dance class this evening.  There is a park right across the street from her class and the weather was pretty good so I decided it was better than just sitting there waiting on her.  When I came back I saw all the other parents literally just sitting there waiting for their kids to get done.  I know this sounds a little judgey (I know that is not a real word), but I just felt like I was seeing what is wrong with our society and our health.  Every one of those people appeared to have the physical capacity to get up and walk and yet I was the only one moving.  People are always saying there is no time in their day for exercise, but it can be as simple as taking a walk while you are waiting to pick up your kids.  I think it all counts.

Food

Breakfast

Pasture Pork sausage, sweet potato hashbrowns, organic cherries, raspberries and blackberries

Lunch

Leftover Hot Plate with Chives

Dinner

Mexican Hot Plate

There isn’t actually a Mexican Hot Plate in Well Fed,  but we have been enjoying the concept and my kids love Mexican food, so we made this one up.  We used spinach as the base then seasoned up grass-fed ground beef with cumin, garlic, onion, paprika, parley and chili powder.  We also had a bag of small sweet peppers that were going to get tossed in the next few days so we put all of those in there for extra veg.  Then we topped it with salsa, avocado and cilantro.  I put a few crushed organic corn tortilla chips in the bottom of the kids’ bowls.  It gets them to eat the rest.  If I put them on top they just eat the chips and leave the rest.

Sleep- Better, but still not great.  Felt a little hot.  Kinda hormonal I think.  Finn got in the bed with me at some point as well.

Exercise- Due to my multiple injuries (both shoulders and left hip) I decided I should take the day off from CrossFit.  I did do a 12 minute Bodyrock circuit and a 5 minute Bodyrock abs with Doug in the afternoon.  I also did a Bodyrock yoga (mostly stretching) for 30 minutes before bed.

Food

Breakfast

Leftover Hot Plate from last night and Avocado

Lunch

Chipotle Salad with Pork and Guacamole

Finn and I had lunch with a friend today.  We ate at Chipotle.  I had a salad with pork, pico, salsa and guacamole.  It was delish!  Finn had been begging me for ice cream, so I took her next door to Yogurt Mountain.

Cake Batter Yogurt with Gummy Worms Anyone?

I let her put 2 gummy worms on her yogurt which she thought was super awesome.  I must mention that I did sample the peanut butter and the espresso and they were both really good!

Dinner

Country Captain Chicken and Mashed Cauliflower

These recipes were from Well Fed.  I have been really pleased with the food from this book so far.  I could have eaten the entire bowl of mashed cauliflower, but I restrained myself because it makes me “blow up” if I eat too much of it.
